Butternut Turkey Chili

1 onion, chopped
2 cloves garlic, minced (or garlic pwdr)
1/2 lb ground turkey (taco flavored kind is good)
1 1/2 - 2 cups peeled, seeded, and cubed (small cubes) butternut squash
1 cup chicken broth
1 can chopped green chilies (or 1-2 fresh, seeded & chopped)
2 (14.5oz) cans diced tomatoes
1 can kidney beans
1 can white hominy, drained (or corn)
1 (8oz) can tomato sauce
1 T chili powder
1 T ground cumin
1 tsp garlic salt

Brown turkey in large pot, add onion and garlic (and fresh green chilies), saute with the turkey 'til translucent and turkey is cooked through. Stir in spices. Add the squash, broth, chilies, tomatoes, beans & tomato sauce. Bring to a simmer, then reduce heat to a med-low, cover, and simmer 'til squash is tender, about 20 min.


It's really yummy, the kids even ate it. Another idea for a snack that I just had is a wasa cracker with low fat cream cheese spread on it with cranberries sprinkled ontop. I was pleasantly surprised. Enjoy!

  2. Hmmm, I want to make it but I don't have any squash. Maybe I could just leave it out???
